# Instructions:

01 - Combine 1 1/2 cups uncooked jasmine rice and 3 cups water in a medium saucepan. Bring to a boil, then reduce heat to low, cover, and simmer for 12-15 minutes until water is absorbed. Let stand, covered, for 5 minutes, then fluff with a fork.
02 - While rice cooks, whisk together 1/4 cup hot honey, 2 tbsp low-sodium soy sauce, 1 tbsp rice vinegar, and 1/2 tsp red pepper flakes in a small bowl. Thinly slice 1 red bell pepper and 2 green onions. Chop 1/4 cup fresh cilantro. Grate 1 tbsp fresh ginger and mince 2 cloves garlic.
03 - Heat 1 tbsp olive oil in a large skillet or wok over medium-high heat.
